A good first course fast and cheap;)
Ingredients: 400 gr
.
150 grams of rice.
white wine 60 gr.
60 grams of butter.
30 grams of grain. tomato paste
a small onion soup
Procedure:
Chop the onion and brown it with half the butter for 3 minutes, then add the rice and toast for 1 minute, add the wine, let it evaporate, then continue cooking gradually add the broth a little at a time.
After 10 minutes add the tomato paste and when the risotto is ready, turn off the heat and stir in the remaining butter and Parmesan.
